Chunky Guacamole - A Mexican Delight


Avocado !!! Yes, it's on my favorite list. As much as I like it as is, also another variant I make is "GUACAMOLE" it's the health buzz these days, full of nourishment of health and much more. This is another way to relish avocado apart from the Paneer avocado sandwich which I had posted earlier.




You visit any Mexican restaurant and they serve you with freshly made signature dips, Guacamole and Salsa with a bowl of corn tortilla chips. Guacamole is one of the easiest recipes of avocado and very easy to make. I like the chunky Guacamole version so let's make it today.

INGREDIENTS 
4 ripe avocado
1 white onion
1 tomato
1 green bell pepper OR a mix of colored bell peppers
1 jalapeno
2/3 green onions
coriander or celery
paprika powder
garlic, ginger, green chilli paste ( optional )
lemon juice
black pepper powder
salt 

Guacamole dip Variant - You can also grind the above ingredients in a blender and make a smooth paste and serve in a dip form. Serve it with your favorite chips.
OR
Spread it on warm tortillas, roll and enjoy.

PROCEDURE :  Chop - Mix - Serve
Take 4 ripe avocado, I like to slice them into chunks, also finely chop all other ingredients too.



Mix all ingredients well, do not over mash. Give it a quick taste test and your Guacamole dip is ready to serve. 

I like to substitute jalapeno  and paprika powder and add garlic, ginger, green chilli paste instead to up the spice level in the recipe to match our indian taste.

Note

- I like to keep the proportion of avocado 1/2 cup or  more than the rest of the finely chopped ingredients as the main dish is of Avocado so it should overpower the other ingredients. 
- I like to use white onion instead of red onion to reduce the pungency and strong flavor of the red onion sometimes tend to over power the taste of gaucamole. 
- You may add or omit the other ingredients as per you like and preference.

Fresh chunky Guacamole is ready. Serve with a varient variety of tortilla chips available or homemade ones.
