"PANEER KATHI ROLL" I remember having my first kathi roll on the streets of Mumbai at Ayub's behind Bombay Stock Exchange, Fort, Mumbai. At the time it was just a roadside food stall among many other's which is now a well renowned place for kathi rolls and kebab's and during our latest India visit in 2014 it offers a wide range of added delicacies too.
Well I love to recreate recipes which I like, not the same, but with my own tweeks, it should be quick, few easy handy ingredients, and not to mention taste amazing. Would you like to know how I make it at home ? Come on, Let's get cooking ...
- these are the ingredients needed to make paneer wraps.
INGREDIENTS
For marination-
( Here we are going to prepare 2 different marination)
1st marination-
Paneer
black pepper powder
Green cilantro chutney
olive oil
cumin seeds
salt
2nd marination-
Bell pepper
Onion
Paprika powder OR chat masala
salt
plating accompaniments-
Roti homemade OR store bought roti / tortillas
Sriracha hot chili sauce OR any tomato ketchup
grated cheese ( optional )
WHY A LEFT OVER DELIGHT... ?
- Well it's my secret tweek to this recipe, my family loves palak paneer so i make more quantity, and instead of the marinated paneer shown here, i use the palak paneer instead.
- For roti's you can use store bought roti OR tortilla's OR leftover roti's too or make some extra roti's in the morning and enjoy them for dinner making these wraps.
PROCEDURE
Step 1 : Cut the paneer into cubes and marinate it with black pepper powder, green cilantro chutney and salt and keep aside.
Step 2 : Cut thin slices of bell pepper and onion, marinate it with salt, paprika powder OR chat masala and keep aside.
Step 3 : Once both the marinates are ready, heat olive oil in a pan, add cumin seeds, hing and slowly arrange the marinated paneer to coat the oil properly and grill it on all sides uniformly by rotation. ( You can very well use grill if you have, it gives a good color and grill marks on the marinated paneer cubes )
FINAL PLATING
Take roti / tortilla, warm it for 30 sec on the pan if you like. Apply Sriracha sauce OR any tomato ketchup on one half and green cilantro chutney on other half of the roti / tortilla, lay the marinated paneer in the center of the roti and the bell pepper and onion marinate over it. You can sprinkle grated or crumbled cheese if you like. Kid's as well as adults love it with cheese too. You can sprinkle more chat masala or lemon juice if you like extra tangy flavor.
Yummy and delicious Paneer Kathi roll is ready to munch on, I love the crisp and crunch that raw bell peppers and onion give and the melt in the mouth bursting flavors of marinated paneer and the tangyness of the sauces ... ummmm just love it !!!
Make it afresh OR make it of leftover's, whatever way you make it these PANEER KATHI ROLLS taste amazing.
