Well you get ample of pickle nowadays in stores but the taste of homemade is the one you cannot beat anyday. Mom made, Home made, Self made has it's own perks and satisfaction in taste. I call it Happy Tummy, Happy Life. 

Hope you have tried my earlier Instant pickle recipe. This is another one. We make this Instant version in our homes when we get fresh early stock of small desi local mangoes in the market. These are small mangoes very soar and tangy in taste, good for making instant versions of such pickles and khatiyu a popular raw mango summer cooler. 

A typical Gujarati everyday meal has pickle fresh or fermented as a part of it. Nothing to fancy, but since childhood we had lunches in this manner thereby adding fermented, Probiotic easy homemade foods to our meal.

I personally make these instant pickles in small batches and remake them again as needed. As these are not made the traditional pickle process way, these go bad if made in bulk and not stored properly due to no adding of oil. So make in small batches and enjoy them fresh.

INGREDIENTS
1 raw mango
2 small red onions
1/2 tsp - turmeric powder
1 tsp - red chilli powder ( optional )
salt as needed

STORAGE
Glass OR Plastic container only. 
Refrigerate for later use after fermenting.

PROCESS
- Wash the mango properly, remove the skin with a peeler and chop it into bite size pieces. Chop the onions accordingly.
- Take all the chopped contents in a large bowl to ease mixing process. 
- If you eat less spicy then omit the red chilli powder OR add accordingly.
- Mix well and fill the clean dry jar/container with this mix and let it ferment over the kitchen counter for 2-3 days.
- You will see the juice ooze out after the third day, it is already fermented and ready to be consumed.
- You can refrigerate this pickle for consuming later.

NOTES
- Locally grown raw sour mangoes taste the best for this recipe.
- I like to keep the proportion of the mango same as that of the onion. You may vary the proportion as per your like.
- This pickle recipe is generous as to the proportions and ingredients so add accordingly.
- Do give the jar/container a well shake after everytime of use to incorporate all the juices and flavor within.
